My interpretation on what could have been if the manga had ended up Sesskag instead of inukag.
I used to be an Inukag fan, but more and more into the series, I grew jaded with the pairing. The canon ending highlighted everything that turned it off for me.
It's a mermaid ending, where the girl has to sacrifice everything to be with the man she loves. The modern-day Kagome was not good enough. So Kagome had to sacrifice her family, her future, her world to become somehting Inuyasha can accept: a miko... basically a carbon copy of Kikyo minus the angst fest.
A whole series, and it ended with how Inu still can't accept and love Kag for who she is. He can only love her when she's wearing Kikyo's clothes, doing Kikyo's things.
That's selfishness (on Inu's part) and stupidity (on Kag's part) at its worst... no matter how much sugar and sunshine were put on the surface.
The issues of their life spans and their species differences were never answered. Everything is glossed over and everyone went home happy. It's a dud of an ending to me.
On the other hand, though it was not the canon pairing, the relationship between Sess and Kag evolved significantly.
Sesshomaru himself is probably the character who's grown the most in the story.
This is my interpretation of what it would be if the final pairing was Sesskag. Both of these characters are people who never run away from a problem, thus, there's the problem: their different life span, their different worlds, the five hundred years that separated them.
Should Kagome stay or should she go?
The Kagome I imagine would definitely stay (as with Inu) because that's how she loves. When she loves, she gives everything. Sesshomaru, on the other hand, would want her to go. Just like with Rin, he'd want Kagome to have a future, to have her own life, though it pained him to let her go.
This is the scene of their separation. Sesshomaru is the one who makes the choice. He'll leave, so that Kagome can go on.
'She turned her back on him. Her shoulders trembled. He smelled the salty scent of her tears. He leaned in, so close that her warmth embraced him.
"If you go..." She said quietly "... if you walk through that door, I don't know where you'll be. I don't know when you'll come back... if you'll come back. If you go, between us, there's only darkness."
He lifted one hand, ran it through her hair. Her human skin shivered under his demon hand. All the differences between them. All the time in the world... they'll never have.
He wanted to lean down... closer. But he knew he would never be able to leave if he did.
Slowly, he drew away, turned his back, and walked out the door.'

I also agree totally with your analysis of the anime's pairing and ending of the series. Possibly on an unrealistic note, I also think they should have made plans to meet up in her era, if he lived that long. They could then carry on where they left off in their relationship. It would be romantic if he were waiting at the well for her. Oh well, que será, será
Also, I have to agree with what Rowdy says, that your ending would be better than the canon.
